In contact with water, basil, arugula, watercress, flax, yellow and white mustard, chia, perilla, purslane and camelina seeds develop a gelatinous substance: mucilage. This mucilage makes them incompatible with sprouting in traditional sprouter, and requires the use of germination cup. The result is beautiful vertical shoots, green and crisp.
